Rockpool alum opens Italian restaurant in Surry Hills – hospitality

Sydney’s Surry Hills is home to a new Italian restaurant by Giulia Treuner.

The newly established restaurateur launched Giuls on Crown Street late last year after more than five years as area manager at Rockpool Dining Group.

Esmerelda Perez was named chef of the place and designed the menu alongside Florentine chef Alessio Rago.

Rago spent 15 years in the kitchen, notably with Michelin-starred chefs Nino Di Costanzo and Antonio Guida (Seta, Milan).

Giuls’ menu is anchored by Tuscan-inspired dishes and a commitment to quality.

“Esmeralda and the team produce almost everything in-house and fresh every day,” says Treuner.

Diners can start their meal with homemade focaccia with smoked rosemary and mortadella with pistachio and green oil before moving on to antipasto plates like market fish crudo with blood orange, lime and basil or burrata with burnt figs and vincotto.

Larger plates include squid ink fettuccine with crab, cherry tomatoes and chili; vodka, pancetta and taleggio conchiglie and a 250g scotch drizzle with grilled baby cos.

Giuls is open from Wednesday to Sunday.
