Friends alumnus Peter Teo runs La Strada as new executive chef, serving a refreshed menu of reinvented modern Italian cuisine

Former executive sous chef of Les Amis (2015-2018), Peter Teo held his first position as executive chef at Bistro Du Vin, Hong Kong (under Les Amis Group) in 2018 before moving to Bâtard, Hong Kong. Teo is dedicated to training budding chefs and has cooked at international events such as the Young Talents Escoffier Asia competition (2018). In his quest for culinary excellence, he aims to enhance the original flavors of fresh ingredients using contemporary cooking techniques.

In his new role, Chef Teo translates his vast culinary knowledge into amazing but honest Italian dishes, with a skillful use of premium ingredients. “I let the ingredients take center stage, because Italian cuisine is often characterized by its simplicity, relying mainly on the quality of the ingredients. My cooking style is a classic flavor profile with a modern twist using only quality ingredients to create meticulously crafted foods, both in taste and presentation. It’s a pleasure to be able to embark on a new culinary journey and it feels good to be back in Singapore, ”says the young chef.

Roasted Australian Lobster

New signature entrees include succulent roasted Australian rock lobster ($ 32) served with celery and almonds with aged balsamic; as well as a refreshing fennel salad ($ 18) made with a robust blend of Taggiasche olives, topped with an orange and yuzu vinaigrette.

Main courses have hearty options like Ragu Lamb Tagliatelle ($ 42) and the savory Japanese sea bream in ‘Acqua Pazza’ ($ 45) with clams, kombu, and tomato broth. Alternatively, indulge in one of Teo’s favorite dishes, the Juicy Organic Whole Roast Chicken ($ 90) with Acquerello Risotto, perfect to share between two people.

All-time La Strada favorites like their Carbonara Spaghetti ($ 38) and the must-have Limoncello ($ 16) with white chocolate, savoiardi, and lemon curd are mainstays of the revamped menu, all complemented by a carefully selected wine selection.

Organic whole roasted chicken

When asked if smoked hay chicken was his version of chicken rice, Teo said, “I was inspired by this roast chicken dish when I was working in Hong Kong. In fact, I was craving a good chicken rice, which is my all time favorite local dish. However, I haven’t come across good chicken rice to satisfy my cravings, which is why I made mine. It was through this light bulb moment that resulted in this derivative dish. The idea of ​​roast chicken served with risotto celebrates the best of Singaporean and Italian cuisine. I have tried using different kinds of chicken to prepare the dish, but this pineapple-raised chicken gives the best results. The chickens are raised without antibiotics, so they are healthier, resulting in a more tender meat that has a unique flavor due to its diet, which then goes perfectly with the risotto.
