Food Review: Osteria Mozza at the Hilton Singapore Orchard
The place One of the exciting new openings in Singapore this year is Osteria Mozzarella, which opened at the Hilton Singapore Orchard, sharing the same main entrance as Estate. The Osteria Mozza brand should be familiar, as it was at Marina Bay Sands before it closed, and thankfully has reopened at Hilton Orchard Singapore as I swear by their pizzas in the past.
Osteria Mozza is one of the few Italian restaurants in Southern California to be awarded a Michelin star, by chef-owner Nancy Silverton. It is a 120-seat restaurant, with a chic contemporary interior. I like that there are different pockets of dining space which adds to the comfort of the ambience.
Otherwise, the best view is the high counter table near the entrance where you get a good look at the action in the open kitchen.
The food Cal-Italian cuisine; the Singapore menu features classics from the original one Michelin star restaurant in Los Angeles, as well as a number of new dishes the majority of which are completely new to Singapore. Expect handmade pastas from Silverton, wood-fired dishes and antipasti from the Mozzarella Bar. There are two wood-fired ovens for Silverton’s fresh pizzas, meats, fish and vegetables. From what I understand from the staff, the pizzas will only be available from September 1st, for lunch service only.
I started with the Burrata from Puglia (S$68) with Cruschi Peppers & Fettunta. I love this Fettunta, a sourdough bread soaked in extra virgin olive oil from Sicily with sea salt. It’s so delicious, and even better when I’ve had it with the fresh burrata.
You know a dish is a signature when the chef’s name is on it. The Caesar salad from Nancy (S$23) with egg, leeks and anchovy crostini is anything but simple. Hearty flavors where the staff recommended I slice the crostini and serve it with romaine lettuce which is so good I rarely say salad.
The Grilled squid (S$22) with spicy romesco is another great starter to share. You get beautifully sliced calamari that has a very tender texture, and it goes well with the richer romesco sauce that isn’t spicy at all.
Let’s move on to the pasta Ravioli Fonduta (S$38) looks plain and simple but bursts with flavor as it’s topped with melted butter. The flavor is very cheesy and rich and it gets a bit cloying after a few bites. My recommendation is to share this dish. The acèto balsamico tradizionale di Modena 25 years old is also added to the pasta, which is balsamic vinegar, as it helps cut through the richness of the cheese.
The other pastas I had were the Orecchiette (S$32), with sausage and Swiss chard. You get an al dente texture for the orecchiette, which is tastier than the Fonduta Ravioli in my opinion.
For the sector, I had the Branzino alla Piastra (S$65), a nice sea bass with herb salad and charred lemon to squeeze over the fish. Lightly buttery flavor of fish skin and meat, mostly boneless, and is a relatively light dish to have after the heavy pasta earlier.
I had the sea bass with a side dish – Grilled broccoli (S$18) with lemon-garlic vinaigrette.
Desserts are also heavy, with an ice cream-centric dessert menu. The Banana and ice cream pie (S$20) is every banana lover’s dream – rich gelato texture and taste, with a delicious crust on the bottom. It goes very well with hot fudge sauce & candied hazelnuts.
Feeling adventurous? There is the Rosemary and Olive Oil Cakes (S$20) with olive oil gelato and fried rosemary. It’s way too tasty for me, and I can’t really appreciate the olive oil ice cream that tastes oily? I stick to Banana Gelato Pie.
Getting mad It gets noisy with the full crowd. It’s part of the dining room vibe, I guess?
Will I come back? Overall the dishes I have had Osteria Mozza are well executed and I like the lively atmosphere of the dining room. It’s not fine dining, so let your hair down and enjoy a meal here at ease. Can’t wait to be back for their pizzas!
